Wildseed Farms

Texas-grown wines and a 55-acre estate vineyard among the wildflower fields near Fredericksburg, Texas

Best known for: Texas wines primarily from a 55-acre estate vineyard

Wildseed Farms near Fredericksburg, Texas, pairs a working wildflower farm with a 55-acre vineyard and a tasting room devoted to Texas-grown wine. John and Marilyn Thomas are the people behind the business, whose roots reach back to wildflower seed production in Eagle Lake in 1982. Today, the family's five generations of farming experience carry into a vineyard with 15 grape varieties—a substantial agricultural operation, not just a few rows beside a tasting room.

Albariño, Tempranillo, and Mourvèdre anchor the vineyard's beginnings in 2015. The wines draw primarily on estate fruit, supplemented by grapes from the Texas High Plains, with white, rosé, and red options. Separate sweet and dry tastings each offer five pours for $25 per person. The $50 chocolate-and-wine tasting pairs six wines with five types of chocolate made by a Fredericksburg chocolatier, plus local goat cheese.

The appeal extends beyond the glass, making Wildseed Farms a useful choice for groups with mixed interests. Wheelchair-accessible paths run beside wildflower production fields and vineyard views, with seasonal pollinators in the gardens. The Lantana Nursery and seed shop reward gardeners, while the BrewBonnet Deli supplies sandwiches, salads, draft beer, and peach ice cream. This is a farm stop with wine, rather than a tasting-room-only outing.
