Heath Sparkling Wines

Traditional-method Texas sparkling house on Highway 290 east of Fredericksburg

Best known for: Traditional-method sparkling wine

Heath Sparkling Wines is one of the clearest specialty plays in Texas Hill Country wine: a Fredericksburg sparkling house devoted to traditional méthode champenoise. Founded in 2019 as part of Heath Family Brands, it focuses on sparkling wine from Texas fruit, with base wines crushed and fermented in Fredericksburg and the in-bottle secondary fermentation finished at the brand’s sparkling facility at Invention Vineyards. Winemaker Jason Englert, who has been with the Heath portfolio since 2004, leads the program.

The wines stay tightly in the sparkling lane rather than trying to be everything at once. Euphoria is the brut cuvée; Ebullience is a ramato built primarily from Pinot Grigio; Blanc de Blancs is 100% Chardonnay; Adoration is a Pinot Noir rosé. That lineup alone makes the place easy to understand, which is rarer than it should be. For visitors, Heath Sparkling leans polished and structured rather than loose and party-driven. The main tasting is a paired sparkling experience with seasonal small bites, reservations are a smart move, and walk-ins work when space allows. It sits on U.S. 290 about 15 minutes east of Fredericksburg, making it an easy stop on a Hill Country wine day if bubbles are the priority. One thing to know before going: this is a firmly adult setup, with a 21+ policy for guests and tight limits on group size.
