Tomi Cellars

Small-batch Central Coast wines from film industry veterans at Buellton’s Industrial Wine Gardens in California

Best known for: Small-batch Central Coast wines and extended barrel-aged reds

Tomi Cellars brings film industry veterans Boyd Shermis and Denise Davis into the cellar at Industrial Wine Gardens in Buellton, California. Shermis leads winemaking, Davis serves as owner and creative director, and assistant winemaker Nate Howden works across harvest, cellar operations and bottling. The winery sources grapes rather than farming an estate, drawing on vineyards across California’s Central Coast.

That reach gives Tomi room to work with more than the region’s familiar Pinot Noir and Chardonnay. Sources include Riverbench Vineyard for Albariño and Pinot Meunier, Watch Hill Vineyard in the Alisos Canyon American Viticultural Area (AVA) for Syrah, and Alta Colina’s Las Colinas Vineyard in the Adelaida District AVA for Grenache and Viognier. Shermis keeps red grape berries whole during destemming, gives them a cold soak before fermentation, and favors extended barrel aging for bigger reds. The wines receive neither fining nor filtration.

The tasting room shares the winery’s working address at 140 Industrial Way, Suite D2. Thursday through Monday visits run from late morning into late afternoon; reservations are recommended, though walk-ins are welcome. Tastings cost $25 per person, waived with a two-bottle purchase. Tuesday and Wednesday appointments are sometimes available by arrangement.
