Siboney Cellars

Cuban-inspired Texas Hill Country winery pairing all-Texas wines with Merlot vineyard views near Johnson City

Best known for: 100% Texas wines, including Mourvèdre and Petite Sirah

Siboney Cellars brings Cuban family history and exclusively Texas-grown wines to a 52-acre property four miles west of Johnson City, Texas, in the Texas Hill Country American Viticultural Area (AVA). Co-founder Barbara Lecuona leads winemaking, with training from Texas Tech University and Bordeaux Sciences Agro. The winery’s name comes from a Cuban love song by Ernesto Lecuona, co-founder Miguel Lecuona’s great-uncle. That connection carries into the visit through Cuban sandwiches, domino gatherings, and pig-roast events—not just a name on a label.

The wines span reds, whites, and sparkling wines, with releases including Mourvèdre, Petit Verdot, and Petite Sirah. The estate Merlot vineyard dates to 2021 and occupies a sloping limestone terrace, with preserved oak trees among the vines. Vineyard views are central to the layout: every tasting-room table and terrace seat looks over the Merlot.

The $30 Classic Tasting offers five wines, while the reservation-only $75 premium tour takes guests through the vineyard, production area, and barrel cellar and includes a culinary board. Thursday Twilight extends the experience into the evening with glass and bottle service, Cuban sandwiches, and cigars. Walk-ins are welcome for regular tastings, and terraces accommodate children and dogs. One planning detail matters: special-event days replace regular tastings, so a casual tasting-room stop and a ticketed celebration require different plans.
