Adega Vinho is a family-built Texas Hill Country winery in Stonewall, in the Fredericksburg AVA, shaped around the Bilger family’s estate vineyard and an on-site production facility. Founder Andrew Bilger’s long-planned project began with breaking ground in 2016, followed by the first vine plantings in 2017. Today the estate covers 14.5 acres under vine, with additional blocks planted in 2019 and 2023, and every bottle is fermented and aged on site.
The vineyard focus leans Mediterranean and Iberian, which makes sense in this part of Texas. Adega Vinho grows varieties including Touriga, Tempranillo, Arinto, Mourvèdre, and Sangiovese, with estate wines built from fruit grown right there in Stonewall. The tasting room avoids the usual Hill Country farmhouse look in favor of something more distinctive: a trapezoid building with a mix of mid-century modern, industrial, and post-modern design, plus work from local artists. For visitors, that means this feels less like a generic stop on the wine trail and more like a place designed for lingering over a glass. There is also an on-site food truck, La Cozinha, serving wood-fired pizza and Chef Marc’s mushroom risotto Thursday through Sunday, which makes Adega Vinho an easy place to settle in for the afternoon.
